Side dish: Caribbean Cauliflower Rice
Ingredients:
2 cups cauliflower rice (grated or food-processed)
1 tbsp coconut oil
¼ cup chopped bell peppers
2 cloves garlic, minced
½ tsp thyme
½ tsp turmeric (optional, for color & flavor)
Salt & black pepper to taste
Instructions:
1️⃣ Heat coconut oil in a pan over medium heat.
2️⃣ Add garlic, bell peppers, and thyme, sauté for 2 minutes.
3️⃣ Stir in cauliflower rice and cook for 3-5 minutes (don’t overcook!).
4️⃣ Season with salt, pepper, and turmeric for a Caribbean touch.
5️⃣ Serve hot with curry, stew, or grilled meats!
