Caribbean Cauliflower Rice (Super Low-Carb!)

Side dish: Caribbean Cauliflower Rice


Ingredients:

  • 2 cups cauliflower rice (grated or food-processed)

  • 1 tbsp coconut oil

  • ¼ cup chopped bell peppers

  • 2 cloves garlic, minced

  • ½ tsp thyme

  • ½ tsp turmeric (optional, for color & flavor)

  • Salt & black pepper to taste





Instructions:


1️⃣ Heat coconut oil in a pan over medium heat.

2️⃣ Add garlic, bell peppers, and thyme, sauté for 2 minutes.

3️⃣ Stir in cauliflower rice and cook for 3-5 minutes (don’t overcook!).

4️⃣ Season with salt, pepper, and turmeric for a Caribbean touch.

5️⃣ Serve hot with curry, stew, or grilled meats!


💡 Carb Count (Per ½ Cup Serving): ~3g net carbs (SUPER low!)
