Menu: Low-Sugar Mauby Recipe (Caribbean Style)
Ingredients:
1 oz (about 2 tbsp) mauby bark
4 cups water
1 cinnamon stick
3 cloves
1 tsp grated nutmeg
1-inch piece of fresh ginger (sliced)
Juice of 1 lime
1–2 tbsp raw honey OR 1 tsp stevia/monk fruit sweetener
Optional: 1 cup unsweetened coconut water
Instructions:
Boil the mauby bark:
In a pot, bring 4 cups of water to a boil.
Add the mauby bark, cinnamon, cloves, nutmeg, and ginger.
Let it simmer for 10–15 minutes.
Cool & Strain:
Remove from heat and let it sit for another 15 minutes to deepen the flavors.
Strain out the bark and spices using a fine strainer.
Sweeten Naturally:
Stir in honey or stevia while the mauby is still warm.
Add lime juice for a tangy balance.
Chill & Serve:
Refrigerate for at least 2 hours.
For a refreshing twist, mix with unsweetened coconut water before serving.
Serve over ice and enjoy!
💡 Tip: The longer the mauby sits, the more bitter it becomes. If it's too strong, dilute it with water or coconut water.
